Easy Holiday Sweets Ideas

If you are like me, you embrace the holiday baking spirit but you always get the ingredients wrong. I cannot make a cookie or cake from scratch if my life depended on it. Let’s face it, baking is tough for some of us, right? Well I have officially discovered a way to make easy holiday sweets that involve minimal baking with a lot of deliciousness packed in!

Dipped Peanut Butter Sandwiches

WHAT YOU NEED:
Your Favorite Crackers
Peanut Butter
1 Pack of Ghirardelli Vanilla Melting Wafers (makes about 20 cookies)
Holiday Sprinkles

First, you make little peanut butter sandwiches out of your crackers. You can choose any favorite cracker, but it is suggested to use a cracker that doesn’t have any added flavoring.

Next, you melt your Ghirardelli Vanilla Melting Wafers according the package directions and dip your sandwiches. I use tongs so that my fingers don’t get messy.

Here comes the fun part! Decorate your cookie with your choice of holiday sprinkles. You want to sprinkle them while they are still wet so that the sprinkles will stick. If you choose to decorate your cookie with icing, you can do so after your vanilla wafer melt dries.

Now, leave your cookies out to dry and then you are done!

How easy is that? A bake free Christmas sweet that the whole family can enjoy. Unless of course they have a peanut allergy. No worries, my next sweet is peanut free!

Christmas Cake Pops

WHAT YOU WILL NEED:
A box of cake mix and the ingredients that it calls for
Ghirardelli Dark Chocolate Flavored Melting Wafers
Jar of Icing
Thick Block of Styrofoam
Lollipop Sticks

First, you bake the cake according to the instructions on the box. Onceit has cooled, you will crumble your cake into a bowl. This is where the icing comes in.

Mix the jar of icing into the cake crumbles. I like to do it in parts. For example, half of the jar of icing goes into the bowl and I mix it throughout, then I put the rest of the icing in the bowl and mix. Once it is all mixed together, you should have a cookie dough consistency to your cake/icing mixture.

Next, you will make little 2 inch balls with your cake/icing mixture and put the lollipop sticks into them. (See the photo above.) Place your cake pops in the freezer for 15-20 minutes to harden.

In the meantime, melt the Ghirardelli dark chocolate flavored melting wafers according to the package.

Then, remove the cake pops from the freezer and dip! The styrofoam comes in handy here for folding up your cakepops while they dry.

I have added some cute little candy pearls and red ribbon to make my cake pops more festive. Feel free to get creative!
