We stayed at the Aruba Marriott Resort & Stellaris Casino, and it served as the perfect home base for our time on the “One happy island” island, equal parts luxury resort, culinary destination, and launch pad for unforgettable Aruba adventures.

The Aruba Marriott Resort & Stellaris Casino recently entered a new era following a multimillion-dollar, phased renovation completed in late 2025. All 414 guest rooms and suites were fully reimagined with a fresh, coastal-forward design that blends modern elegance with relaxed island living. A soothing palette of sand, tan, and taupe anchors the spaces, while coral and sea-glass accents subtly nod to the Caribbean coastline. Floor-to-ceiling windows flood the rooms with natural light and showcase sweeping views of Palm Beach and the Caribbean Sea.

The rooms feel polished yet inviting, with marble-topped work desks, new sofas and armchairs in tropical tones, updated flooring, and refined details like rattan desk lamps and minimalist metallic lighting. The bathrooms deliver a spa-like experience, featuring double vanities with marble countertops, back-lit mirrors, walk-in showers with waterfall shower heads, and select oversized soaking tubs.

For travelers seeking a more elevated, adults-only experience, the Tradewinds Club offers a refined retreat within the resort. This exclusive club level, open to guests 18 and over, features deluxe ocean-view rooms, a private check-in experience, and a dedicated concierge to handle everything from dining reservations to island excursions. One of the biggest surprises of the trip? Aruba’s food scene. I have to say, Aruba had some of the best food I have ever experienced while traveling. From upscale dining to casual beachfront bites, every meal felt intentional and memorable.

Atardi (Aruba Marriott Resort)

Dining at Atardi at the Marriott is one of those experiences that lingers long after the trip ends.. Named for the Papiamento word meaning “late afternoon,” Atardi perfectly captures the magic of golden hour in Aruba where tables are nestled into the sand and sunset views stretch endlessly across the ocean. The menu focuses on fresh seafood and refined Caribbean flavors. Whether you’re celebrating a special occasion or simply savoring a romantic evening by the sea, Atardi delivers an unforgettable dining experience that feels intimate, atmospheric, and unmistakably Aruba.

Mercát (Aruba Marriott Resort)

Mercát is the resort’s newest culinary destination and a vibrant addition to Aruba’s dining scene. Inspired by the flavors of the Mediterranean, Mercát invites guests into a warm, shareable dining experience ideal for families, friends, and leisurely evenings together. The menu features thoughtfully curated dishes made with fresh ingredients and influences from Spain, Italy, Lebanon, and Greece, while the setting itself mirrors the cuisine—blue tones evoke Mediterranean waters, neutral hues create a calming atmosphere, and expansive windows frame views of the Caribbean Sea. It’s an immersive, transportive dining experience that feels both worldly and perfectly suited to island life.

Linda’s Dutch Pancake Restaurant

Breakfast in Aruba deserves its own spotlight, especially when it involves Linda’s Dutch Pancake Restaurant. Dutch pancakes are thinner than American pancakes but thicker than crepes—and they can be sweet or savory.

Think combinations like:

  • Fresh fruit and powdered sugar
  • Cheese, bacon, or smoked salmon
  • Unique sweet-savory pairings you don’t often see in the U.S.

It’s a fun, delicious nod to Aruba’s Dutch heritage and a great way to start a day of exploring.

Liquid Chef GastroBar

For a creative, modern dining experience, Liquid Chef GastroBar is a standout. Known for its inventive cocktails and chef-driven menu, this spot blends bold flavors with playful presentation. It’s ideal for foodies who love a little drama on the plate, and in the glass.

I ordered the Mrs Universe cocktail and it required me to put on a Mrs. universe sash, strut my runway, to get my cocktail and crown. Liquid Chef is definitely a memorable experience.

Azar Open Fire Cuisine

Azar Open Fire Cuisine brings the heat—literally. With a focus on open-fire cooking, the menu centers around smoky, flame-grilled dishes that feel rustic yet refined. It’s the kind of place where the atmosphere is as memorable as the food, perfect for a lively evening out. I loved the scallop appetizer and the tasty Korean Short Ribs for dinner.

Things to Do in Aruba: Culture, Adventure, and Island Life

Aruba is incredibly easy to explore, and the island offers far more than just beach lounging (though there’s plenty of that too).

De Palm Snorkel Cruise

One of the most fun excursions we did was the De Palm Snorkel Cruise. This sail-and-snorkel experience takes you out on the water for a relaxing yet adventurous look at Aruba’s marine life and history. We boarded the catamaran and voyaged to our first stop which was to snorkel the famous WWll SS Antilla shipwreck. I cannot begin to describe the majestic feeling when snorkeling this wreck. You feel so tiny swimming around exploring this massive ship.

Then we made two more stops to snorkel with sea turtles and beautiful marine life in the refreshing clear waters of the Caribbean. After exploring the sea, we enjoyed drinks and a tasty lunch before heading back to shore. This activity is perfect for both first-time snorkelers and seasoned ocean lovers.

Aruba Aloe Factory & Museum

A visit to the Aruba Aloe Factory offers insight into one of the island’s most iconic exports. Aruba Aloe has been producing aloe-based skincare for over a century, and touring the factory and museum is a great way to learn about the island’s history while picking up high-quality, locally made products. We even got to roam around the beautiful aloe crop after the tour and get some scenic photos.

Aruba Mural Tours

Aruba Mural Tours offers a deeply immersive look into the island’s thriving street art movement, led by the creative forces shaping it firsthand.
