Burrito Night with El Monterey

My boys’ favorite night is burrito night – they get to customize El Monterey® burritos with one of our family member’s favorite toppings and then serve that family member the finished burrito. This is such a great family project that happens to be very tasty too!

El Monterey® Chicken and Cheese Taquito

My boys love these taquitos plain, but I spice them up a little for my husband with sriracha and tomatillo sauce. El Monterey’s® chicken and cheese taquitos are great for parties as they are easy to pick up and can be dipped in any sauce for an extra flavor pop. I have done a taquito bar when having margarita night with the girls where I heat up a few boxes of taquitos and create 3 delicious Mexican style dipping sauces such as chipotle mayo, queso, or Mexican white sauce.

Mexican White Sauce:

  • 2 cups creamy salad dressing, e.g. Mayo
  • ¾ cup milk 
  • ½ tablespoon crushed red pepper flakes
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon salt
  • 1 ½ teaspoons garlic powder
  • 1 ½ teaspoons dried oregano

Measure salad dressing into a medium bowl. Gradually stir in the milk. Season with red pepper flakes, cumin, salt, Measure mayonnaise (or creamy base of choice) into a medium bowl. Gradually stir in the milk. Season with red pepper flakes, cumin, salt, garlic powder, and oregano, and mix well. Cover and refrigerate for at least 2 hours to allow the flavors to blend. If you taste it right away, all you will taste is mayonnaise.

El Monterey® Beef and Bean Burrito

The beef and bean burritos are full of flavor but neutral enough in their flavor that they go well with almost any topping! They also use real ingredients, like real beef, which is key to making them taste so great. For burrito night, I set out tons of toppings and each family member draws a name out of the hat to decide who they are making the burrito for. Then we get to work creating our burrito masterpieces for the family member that we chose. The only rule is, you have to try the burrito that is made for you! Surprisingly, we have come up with so many topping variations that have gone in the recipe book for future use! You can pick these products up at Publix or online.
