So I have been on Weight Watchers for a few weeks, off and on if I am honest. I’m not beating myself up that I haven’t adopted the program 100% yet because it takes time to make drastic lifestyle changes. Nevertheless, I am making progress. In the app, they have recipes that you can try to maintain a low point balance. These Fiesta Shrimp Bites are my absolute favorite snack and are even great for parties! (15 min to make)
Medium Cooked Shrimp
Guacamole (homemade or store bought)
First spoon a dab of salsa verde in the bottom of each phyllo cup.
Then, fill the rest of your phyllo cup with guacamole.
Pull the tails off of your cooked shrimp.
Place one medium shrimp on top of each phyllo cup.
Last, chop your cilantro and sprinkle on top of your snack!
And there you have it! These fiesta shrimp bites are delicious AND healthy!
